Good find, feels, although I fear it's a double post. Nevertheless, the videos are only proof that there is no real defence against a knife. Look at how many times they get stabbed in the first two videos.

The guy defending would probably be dead after the fact even if he managed to get away...
Osu! I donīt think a headlock is a very good defense against a knife, but anyway... :(

Most defending against a knife is a joke. Luck, speed, and more luck are what you need.
Any time someone suggests that they can defend against a knife, give them a cheap white t-shirt, and attack them with a red marker. Cuts on the hands and arms disable those areas proportionate to the cuts. (IE: He doesn't take two good "cuts" across the hand/ fingers and still get to grab with that hand. Aside from the damage, the blood will make everything very, very slippery.)
Caveat: If he pulls a real gun, tell him, "You win!" If he tells you he has a gun at home, you win! :D

Yeah, I don't think the idea is to come out unscathed. But if someone intends to stab you no matter the reason, you find gaps where you can make a run for it.
Run, run as fast as you can unless cornered in which case try and act even crazier than the guy attacking you :D - the only answer to all self defense is either don't be there or keep it simple and be fully committed.
