Mmm fire, mmm meat
I got caught in a little downpour today with the family. If it weren't for being in Koreatown at the time, it could have been ugly. There's nothing like a wood fire to ward off a chill, all the better if bits of juicy pork and beef are sizzling on the grilll. Chige, a hot and spicy stew of tofu, veggies and clams also helped to raise core temp.
Every culture has its method of cooking meat over a flame. Where I live I'm fortune to be able to sample different approaches, but in Koreatown I'm never disappointed. Mmm fire. Mmm meat. |

Yes, Meguro, not much is a greater technical innovation than meat over an open flame. Primal, or prime rib, it's of little import compared to the actual eating. Osu!

Nothing beats a Brazillian Churrascaria. I have to prepare my body by eating very little the day before and doing a very hard training session that day. The best part is eating the BBQ'd pineapple. Oh soo good. Totemo oishii desu yo!

Doh! I bragged about the selection of different cuisine in these parts, but as for Aussie BBQ. . . does Outback Steakhouse count?

Unless Outback has started serving roast Kangaroo and Koalatori, I don't think so. ![]() Osu!

Osu Kuriso,
Brazilian barbecue is really great, in fact I made one last saturday....I love to do barbecues..the smell of charcoal...the beer...the preparation of the meat....and a love to eat it too....of course ..heheheheh. One tip...I don't know where you are, but there is a great churrascaria in US that originally is from São Paulo Brazil....it's called Fogo de Chão......I always go to their units here in Brazil...and it's always great.....Probaly the units in US have the same quality....Here is the link... http://www.fogodechao.com/ They have excelent meat. Very traditional way os doing Brazilian Barbecue. The Japanese emperor loved it....he visited one here in Brazil last weekend (celebration of the 100 years of the japanese immigration to Brazil) I'm very curious about the australian way of doing barbecue......people say it's excelent...unfortunately I had never been to Australia (yet....)....and there are no Aussie restaurants here in Brazil. The American way of doing ribs is also Great....when I lived in Colorado I ate some excellent ribs down there..... mmmm...I'm hungry!!!!! Osu! |

Thanks for the link, Brazilian Berseker. None in my area yet, but maybe that will change. I see you made Churrascaria on Saturday, and the Emperor of Japan ate some at the weekend. Same party? Osu!

Bezerker,
It was part of a vacation. We went to Hong Kong for a few days then took the Ferry over to Macau and stayed at the Venetian for a few days. Macau is a very interesting place being that there is still a heavy Portuguese influence. Many signs are in Chinese and Portuguese. I was able to figure out most of the signs from the little Spanish that I know. They're trying to make Macau more like Las Vegas. The MGM Grand opened a few days before we arrived. The Wynn casino also opened recently. There were a few foreigners around but the main market were people from Hong Kong and Guangdong. Going back to BBQ, the only thing that trumps a Churrascaria is goold old Guam style BBQ. Yummy! ![]() |

Osu! Kurisu, what's so special about Guam style BBQ? Something in the marinade/rub/sauce or is it in the fire?

Gotcha.
Pork, lends itself to BBQ. My favorite is pulled pork. Here's some BBQ porno for you carnivores. I've got a short cut for pulled pork that requires no smoke or fire, so technically it's not BBQ, but if you live in an apartment complex it might be your only shot. Take a nice hunk of pork, loin or shoulder, and brown it. Put it in a pressure cooker to which you add a can of Coca Cola (Pepsi works too), dry mustard, soy sauce, grated ginger, honey (if you like it sweet), salt & pepper. Fire up the pressure cooker and wait about 40 minutes. You'll have to experiment with the time, which will vary with the amount of meat and liquids. |
