One model to use is the Figher's Profiles on the K-1 website:

If you look at Filho's profile, it has the basic information that could be entered for Kyokushin fighters. The data could be extracted from various sources (online, Karate World, individuals, etc.) I'm sure as a community we will help and contribute. I volunteer to help.

Smoothsakes suggestion makes sense to me. Also AD has a lot of statistical information on fighters on his Kyokushinresults website. He is a member here also. K4L you could PM him and see if he can supply you with any info to get the page well and truly started.

Yes, definately main page and it's own section. Don't worry about writing stories, basic information is enough for all but if any of us could help you on information about fighters, I'm sure we'd be glad to contribute.

I originally took the format of the K-1 Website and got some of the information off Kyokushin.co.jp. And then I found the Liberdade Dojo's official site which gave me the date of birth and favorite technique. Because of Liberdade's site they are the most complete. Essentially they all pretty much look the same. This is just the basic information.
