Soshu Shigeru Oyama ( in his prime ) vs. current champs of what ever year.
I had the honor of training under Soshu Oyama 1971 - 1975?...I practiced fought with him many times. As a kid. Saw him fight in the dojot too many to count but I can't recall any really hard fights. I wish to see footage of him really fighting, either 100 man kumite of other fights....
That would be my dream match up that never happened.

How about Joko Ninomiya against Hideyuki Ashihara (RIP)? Both were absolutely incredible fighters in their time and having a student vs. instructor bout always creates an interesting dynamic because they know how the other one likes to fight, it can be very technical, and indeed intense but such matches are always quite respectful! Then again wasn't Ashihara more into focusing on self defense and less on competition than Ninomiya?
Here is an interesting match between a student and master, this is what gave me the idea:

Azuma Takashi vs. Jon Bluming but I bet that already happened right? Kudo is one of my fav martial arts they don't really have it in Montreal where I live, so I'm settling with Kyokushinkai for now.

An interesting matchup. Both men are advanced Judoka on top of their
Kyokushin training. All Japan Knockdown competitions had existed
since the 1960's. By the time the 1st World tournament came around,
the Japanese had approximately a 10 year head start on the rest of
the World in terms of Knockdown karate skill sets. I believe the
1st World tournament would have been after Bluming's time.
However, it would have been an interesting matchup.

but with limited grappling allowed on the ground.
2. Mas Oyama vs. Takayuki Kubota with mixed karate rules making it fair
for both parties.
3. Mas Oyama vs. Morio Higaonna, knockdown rules

Under KD rules, IMHO Mas Oyama wins on weight & size difference!
Make it no rules & I think Morio Higaonna would win 9 out of 10 times.

I believe you are underestimating one of them.
They were both amazing fighters who had many street fights, dedicated their life to martial arts, studied in many styles and created their own style/form of martial art.
I don't think it'd have been that unbalanced.
